Food Handler's Permit

This week I decided to get my food handler's permit. Why, you ask? Am I suddenly desirous of working part time at Mickey D's? No, I want to be able to cook food for school to use in experiments and activities and be legal. I thought that I would leave class with a few great stories. All I saw was a girl with orange hair wearing pajama bottoms. The best part was the gross pictures we saw on a Diane Sawyer documentary. Needless to say, I passed the test! (It was an oral test where the whole class discussed each question.) Why I was worried I don't know!

Stay Away From Our House

For the last week both Jim and I have been sick. He has even missed three days of work. Today we found out that he has a sinus infection and an upper respiration infection. We both spend our evenings coughing and hacking. Hopefully, since Jim got some prescriptions he will soon get better. I'm feeling better except for the coughing all day long. We are trying to spend a quiet weekend. I have parent-teacher conferences this week so I need to get better. Needless to say, stay away until further notice.

One Year Anniversary

First day

A few months ago in Vermont

This Thursday will be Brad's one year anniversary. We have missed him very much, but the time hasn't been as bad as we had thought. (I guess that the master's has helped.) So to celebrate here are a few pictures of our missionary.

Sorry

Yes, I know3 months since I've blogged. Once school and my night classes started life became quite crazy. I am on the downhill slope towards April. I am starting to work on my "Capstone" project. This is in lieu of a master's thesis. So, if I'm slightly crazy between now and April, just know that this too soon will pass.

A Quiet 24th

Jim and I decided to have a quiet 24th of July. We fixed a chicken pasta salad the day before. (It has to be the day before so that the red onions can begin to work.) Then that morning we took a hike to Donut Falls. Now I know that many would think, "What a woosy hike!" Not for me. I was grateful for the bottles of water and my dried bananas. Anyway, it was wonderful to be outside. There were still some wildflowers around. Jim was remembering Fathers and Sons campouts where Brad and his friends would make the hike from the Spruces 2-3 or more times in a day. Brad's comment on the memory was, "Wish I had the energy that I did when we were doing that!" Jim and I took our camera, but forgot to take any pictures so here is one from the internet.

Isaac, the Baseball Player

This week Jim and I traveled with Eric up to Malad to watch Isaac's baseball game. It was machine pitch. Isaac is over a head taller than all of the other players. When he got up to bat the coaches yelled to their team, "Move back, move back". Isaac wore long pants so he could slide into home for us.

What Do You Do In Denver!

What do you do in Denver? Well, in our family the number 1 thing to do is see a baseball game. We saw games with Tampa Bay and the Rockies. We couldn't believe how many home runs were hit at that park. We had a great time talking to the people around us. We had people from New York, Kansas City, and even Aspen. Would you believe that it takes @3 hours one way to get to Aspen from Denver. This was reported by the sushi chefs from Aspen who were sitting by us. Makes you really appreciate living in Utah where the ski resorts are so close. Anyway, we were able to stay in downtown Denver so we walked everywhere. The only bad part about the trip was the marathon ride home all in one day. (These pictures were from our fantastic seats at the game.)

Denver Trip

Yes, it's about time I put in another entry. Two weeks ago Jim and I traveled over to Denver. Yes, we drove! What a long way. We took the Wyoming route. We stopped overnight in Cheyenne. What an exciting town it is. We were amazed that it is the state capital?! While there we noticed not much, but we did happen to catch this wonderful billboard. Such a positive thought

While in Cheyenne we stayed at the Little America Motel for old times' sake. Boy, did that bring back memories from trips to Salt Lake with mom. The room up there was exactly the same as those in SLC complete with pop bottle opener in the bathroom.

These are the Voyages of the Starship Enterprise!

As you probably know the prequel to the Star Trek TV show has been out 1 1/2 weeks. Well, my secret trekkie was anxious to see the movie. So, in one week's period we have seen the movie twice. First, we saw it at a regular theatre and then we saw it on IMAX last night. I have to admit, the best way to see it is on IMAX. I am not a trekkie, but it was fantastic! Remember - "Live long and prosper"

Yippee!!!

I just wanted to share the news that I am finished with my masters classes until July. I can't believe that I made it through teaching school all day and then having 3 classes at night. All I can say is that I would not have made it without the support of my wonderful husband. It's time to celebrate!!!

Aspen's Visit

Kristy and Aspen came over last Saturday. Jim and I were busy making cookies for a missionary farewell in our ward. Jim pulled out our new toy, a Flip Video Camera. We had to try it out on Aspen. Check it out!

What are the Davis's doing lately?

We are dang boring people! I feel so sorry for Jim. I am so obsessed with working and doing my assignments for my 3 night classes that we have no life. His saviors are Kristy and Ike who go skiing with him. I have been working constantly this week on my mid-term project for one class. I had to make a manipulative game for my students - 36 copies of it. Jim has even taken pity on me and helped. He now is quite the pro on cutting out lamination. Should we hire him out? The pictures are of the glorious final project. It was supposed to look different but of course along the way people said that they could bind it with spiral binding, and then changed their minds.

Christmas Fun

We had a great Christmas, especially around 5:45 when Brad called. It was so wonderful to hear from him. He was cracking jokes and being just his normal old self. Ike stopped by for a few minutes to talk to him also. Jim got a special gift from his employees at work. It is a coat rack made out of miniature skiis. Jim is going to put it up in his office. I guess he must be a pretty good boss.
